- 1 banana
- 60ml Soymilk
- 60 g flour
- 1 teaspoon baking powder
- 1 teaspoon sugar
- 5 ml fresh cream (liquid)
- Some Vanilla Ice cream
- teaspoon oil
- 1 tablespoon brown sugar ginger syrup
- A little fresh mint for garnish

- Sift the flour and baking powder into a mixing bowl. Add the sugar and soy milk, then mix everything together.
- Cut the banana into slices. Take 2 or 3 slices from the ends (as they are less attractive) and mash them with a fork. Then, add this mashed banana to the previous mixture.
- Heat your pan over medium heat and add the oil. Using a small ladle, pour some of the batter into the pan, forming a circle. Repeat until all the batter is used up.
- Flip the pancakes when bubbles appear on the surface.
- Toward the end of cooking, add the banana slices to the pan to let them brown.
- Serve the pancakes on a plate and add vanilla ice cream, whipped cream, brown sugar ginger syrup, and place the fresh mint on top.
